Chettinad Chicken


INGREDIENTS:

  1. Chicken pieces - 1/2 kg

  2. Chettinadu masala powder - 3 1/2 tsp​

  3. Cinnamon stick - 1 inch

  4. Cloves - 1

  5. Cardamom - 1

  6. Slit Green chili - 4

  7. Ginger paste - 1tsp

  8. Garlic paste - 1 tsp

  9. Chopped Tomato - 250 grams

  10. Finely Chopped Onion - 250 grams

  11. Turmeric powder - 1/2 tsp

  12. Oil - 1/4 cup

  13. Salt - as needed                                                              

Chettinadu masala powder :

  1. Fenugreek seed - 1  tsp.

  2. Cinnamon stick - 6 inch

  3. Cardamom - 4

  4. Clove - 4

  5. Black pepper - 2 tsp.

  6. Cumin seed - 2 tsp

  7. Fennel seed - 2 tsp

  8. Coriander seed - 6 tsp

  9. Maratti mokku - 3 tsp

  10. Pineapple flower - 3

  11. Dry sea weed - 5 sheet

  12. Curry leaf - 2 stem

  13. Dry chili - 6 or to your spice preference

 PREPARATION:

     Dry roast all these ingredients in a pan. and Cool down to room temperature and grind them into fine powder.

Method:

  • In a pan heat oil. Now add cinnamon stick, clove, cardamom and sauté for 30 seconds.

  • Now add the chopped onion, green chili and sauté until the onion turns golden brown

  • then  add the chopped tomatoes and cook until they become mushy.

  • Then add the ginger -garlic paste and cook until oil separates.

  • now add the chicken, turmeric powder, salt

  • cook the chicken it 3/4 cooked.

  • Finally add Chettinadu masala power and cook until the oil starts to separate and the right thickness is achieved.
